Crockpot Ranch Chicken & Gravy with Buttery Mashed Potatoes

For the Ranch Chicken & Gravy:

  • 2 lbs boneless, skinless chicken breasts (or thighs for extra tenderness)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (0.87 oz) chicken gravy mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened
  • 1 tbsp butter

For the Buttery Mashed Potatoes:

  • 2 lbs russet or Yukon gold potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup heavy cream (or milk for a lighter option)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional)

Instructions

Step 1: Prepare the Crockpot Chicken

Place the chicken breasts in the crockpot and sprinkle the ranch seasoning, chicken gravy mix, garlic powder, onion powder, and black pepper over the top. Pour in the chicken broth and cream of chicken soup. Stir lightly to combine. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.

Step 2: Make the Gravy Creamy

Once the chicken is fully cooked, remove the lid and shred the meat using two forks. Add the cream cheese and butter, stirring until fully incorporated. Let the mixture sit in the crockpot for another 10-15 minutes to allow the gravy to thicken and become rich and creamy.

Step 3: Prepare the Buttery Mashed Potatoes

While the chicken finishes in the crockpot, bring a large pot of salted water to a boil. Add the peeled and cubed potatoes, cooking until fork-tender (about 15-20 minutes). Drain and return the potatoes to the pot. Add butter, heavy cream, salt, pepper, and garlic powder (if using). Mash until smooth and creamy, adjusting seasoning as needed.

Step 4: Serve & Enjoy

Spoon a generous portion of mashed potatoes onto each plate and top with the creamy ranch chicken and gravy. Garnish with fresh parsley or chives for added color and flavor. Serve hot and enjoy a comforting, satisfying meal.
