Grilled Chicken Avocado Salad with Creamy Cilantro Dressing

For the Salad:

  • 1 grilled chicken breast, sliced
  • 4 cups mixed lettuce (romaine, green leaf, or spinach)
  • ½ avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, sliced
  • ½ cup corn (fresh or canned, drained)
  • ½ cup roasted carrots (optional)

For the Creamy Cilantro Dressing:

  • ½ cup Greek yogurt (or sour cream)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • ¼ cup fresh cilantro, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp water (if needed for thinning)

Instructions

Directions:

1️⃣ Grill the Chicken:

  • Season chicken with salt, pepper, and a drizzle of olive oil.
  • Grill over medium-high heat for 4-5 minutes per side until fully cooked.
  • Let rest, then slice.

2️⃣ Prepare the Dressing:

  • In a blender or food processor, blend Greek yogurt, olive oil, lime juice, garlic, cilantro, salt, and pepper.
  • Add water if needed to thin the dressing.

3️⃣ Assemble the Salad:

  • In a large bowl, layer lettuce, cucumbers, corn, cherry tomatoes, avocado, and roasted carrots.
  • Add the sliced grilled chicken on top.

4️⃣ Drizzle & Serve:

  • Pour the creamy cilantro dressing over the salad.
  • Toss lightly or serve with the dressing on the side.

5️⃣ Enjoy!

  • Garnish with extra cilantro and serve immediately!
