  • 2 tablespoons honey
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley or thyme
  • 1/4 cup chopped pecans or walnuts (optional, for crunch)

Instructions

Step 1: Roast the Sweet Potato Rounds

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss the sweet potato slices with olive oil, salt, black pepper, and cinnamon (if using). Arrange them in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway through, until golden brown and tender.

Step 2: Assemble the Toppings

Once the sweet potatoes are done roasting, transfer them to a serving plate. Sprinkle each round with crumbled feta cheese, drizzle with honey, and add a pinch of red pepper flakes if you like a bit of heat. Garnish with fresh parsley or thyme and chopped nuts for extra texture.
